We cook the way the best kitchens in Guangzhou and Chengdu do: a very hot wok, a short list of dishes, and nothing that sits under a lamp. Dumplings are folded by hand every morning. Ducks are dried for two days before they meet the oven.
Vegetables come from farms within an hour of the dining room, which is why the menu changes with the season. When something runs out, it is marked sold out rather than swapped for something lesser.
